Our Story

Born in Avignon, Julien Allano grew up with a love for big shared tables and the convivial dishes of the South. From an early age, cooking felt like an obvious path: meals that bring people together, recipes passed down, time spent around the table as much as behind the stove.

After hospitality studies, he trained in renowned houses in the South of France—from Avignon to Corsica, then to Grignan—where he refined a sensitive, rooted cuisine, attentive to produce and the seasons.

For more than fifteen years, he worked with Mediterranean terroirs, soaking up their gestures, their aromas, their light. Until the moment came when he felt the need to fully express his own vision.

Julien then chose to become a chef-owner and opened in Bonnieux, in the Luberon, Ju – Maison de Cuisine: an intimate, elegant table where the cooking is experienced up close, in direct dialogue with guests. With its open kitchen and discreet atmosphere, Ju – Maison de Cuisine becomes
a place of total expression. A heartfelt, seasonal cuisine, immediately recognised by his peers. A year after opening, Ju – Maison de Cuisine was awarded a Michelin star.
But this story couldn’t end there.

What was missing was a place to tell where Julien comes from. A place to bring to life everyday dishes, family recipes, big shared tables, and the spirit of sharing that first sparked his passion for cooking.
Goût Bistrot is that return to his roots—but not only that.
It’s Julien’s take on the cuisines of the South: a sun-filled cuisine that brings people together and makes you feel good.
